What the guac is this?

It's not guacamole. It's not pico de gallo either. It's both! I had some leftover avocado from the hummucado sandwhich, but it was not enough for making guacamole. I think that the next best thing when you want guacamole, but you don't have it, is pico de gallo.

So, I started doing pico de gallo, but I also wanted to use the avocado, so I chopped it and mixed it in. I added all the things I would use for a regular guacamole, plus the ingredients for the pico de gallo. Not bad. Not bad at all.

Here's how I did it:

  • 1 tomato, chopped in small cubes (I squeezed most of the pulp out)
  • 1/2 small onion, chopped in small pieces
  • 1/4 to 1/2 avocado, chopped
  • chopped jalapeño (amount depends on your taste)
  • 1 clove garlic, minced
  • 1 tablespoon chopped cilantro leaves
  • 1/2 teaspoon ground cumin
  • juice of 1 or 2 limes
  • salt

Mix all the ingredients well until the avocado starts coating the rest of the things, but don't let it disintegrate completely. Eat with chips, on tacos, burritos, over rice, or whatever your little heart desires.
